Rainbow Pasta Salad


Ingredients:

1 whole cucumber (organic when possible)

1 large bell pepper (yellow, red, green, purple, orange. Organic when possible)

2 tomatoes

1/4 cup sliced red onion

1/2 cup sun-dried tomatoes

1/2 cup marinated artichoke hearts

2 pan fried Field Roast Italian Sausages

1/2 package whole wheat noodles - cooked, rinsed and cooled. (can substitute any whole grain or bean pasta)

Optional: 1 can drained/rinsed garbanzo beans

Dressing:

1/2 cup avocado oil

1/4 cup red wine vinegar

1/4 apple cider vinegar/white wine vinegar

1 T dried Italian herbs

1 T dried/fresh basil

Pinch of salt/pepper

1/4 t stone ground mustard (optional)

Preparation:

Dice vegetables and combine with cooled pasta. Top with beans, chopped sausages and dressing.
