Tofu Scramble

Ingredients:

1 package extra firm tofu - drained and crumbled

2-3 T nutritional yeast

1/2 tsp turmeric powder

Salt/pepper to taste

Optional:

Chopped spinach

Diced onion

Preparation:

To drain tofu, use tofu press or microwave tofu in paper towel for 3 minutes. Remove from microwave carefully and let cool before crumbling.

In large frying pan, add crumbled tofu along with spices/veggies. Cook over medium heat for 5-7 minutes. Serve with breakfast potatoes and toast or in a breakfast burrito.
